Biscuit Cornflakes Recipe

This is one of my favourite Raya cookies. Every time when I get to my grandma's house for Raya, I would be searching for a tin of these cornflakes biscuits. Usually my aunty Mak Na would bake them. I remembered a while back when I was still in the UK, I emailed her for the recipe. But I never got to actually baking them.

So this year, I asked for the recipe again. So she sent me a pic of the recipe which was from a page of a magazine.



Feeling very the semangat, I bake it over the weekend. And when I say semangat, I don't have an oven you see, so I lugged Mama's Butterfly Oven to my house for the day!

This was the first batch which had plenty of cornflakes coated into the batter one by one.



By the second batch, I was running low of cornflakes so I just crushed them and mixed it into the batter. Saves so much time!


I was super nervous to bring the cookies to my in laws for everyone else to taste coz obviously I couldn't taste it first! But Alhamdulillah it tasted so GOOD! It was a fail safe recipe!! Super easy so give it a try!!

Healthy Chicken Nuggets Recipe

Processed meat in burgers and nuggets are really bad for you. Some research also shows they are one of many cancer causing agent so I was happy to find out that there are many EASY and homemade nugget recipes.

This recipe was shared by my best mummy buddy Jid!!
So I tried them last night and OMG so easy to make so delicious!!

Homemade Chicken Nuggets
Ingredients for about 24 nuggets:

Ingredients
  • 1 lb ground chicken
  • ¼ cup old-fashioned oats
  • ¼ cup grated Parmesan cheese, divided
  • 1 tsp Zatarain's Creole Seasoning, divided (optional) sub paprika
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ¾ cup breadcrumbs
Instructions
  1. In large bowl, combine chicken, oatmeal, half the grated parmesan (1/8 cup), half the Zatarain's seasoning (or paprika) (1/2 tsp), garlic powder and pepper. Knead dry ingredients into ground chicken.
  2. Moisten hands to prevent sticking and form 1 tbsp of chicken mixture into a ball. Press into a cookie cutter for shaped nuggets or flatten with fingers for a basic nugget shape.
  3. In small bowl, combine breadcrumbs with remaining Zatarain's seasoning and grated parmesan.
  4. Press nuggets into bread crumb mixture and turn over, patting crumbs into surface to coat evenly.
  5. --At this point you can freeze-- or
  6. To bake: Preheat oven to 375° F. Arrange nuggets on cookie sheet sprayed with cooking spray or lined with parchment paper. Lightly spray nuggets themselves with cooking spray or olive oil for a crispier coating (optional). Bake 15-20 minutes, turning once, and checking - don't overcook! These baked nuggets will not really brown (unless you pan fry in oil) - if browning is desired, place under broiler for a couple of minutes at the end of cooking.

I used Steak Spice instead of the Zatarain and that works well.
I also fried them instead of baking them and the first batch is slightly overcooked.


I made about 30 mini nuggets and fried about 10 and froze the rest.

Pancakes Recipe

Easiest pancake recipe and so yummy too!

Here's the recipe (given by Jid);

Dry ingredients
1 1/2 cups  ALL PURPOSE FLOUR
1 tbsp        SUGAR (although I tend to put a bit more in so that you can eat them plain)
3 tsp          BAKING POWDER
1/4 tsp       SALT

Wet ingredients
1 1/4 cups  FRESH MILK
1               EGG
2 tbsp        MELTED BUTTER
1 tsp         VANILLA ESSENCE

Mix dry and wet ingredients separately, and then combine.


I even had a little helper last weekend!!

I might thrown in bananas and choc chips this weekend to the recipe above. Will let you know how that turns out!!
